This is another Professor Pods ‘White label’ special edition chilli sauce. Incan Gold is a lovely, smooth sauce with a real South American feel!
This sauce has an amazing citrus front end – thanks to the ‘aji’ chillies used to make it. The citrus flavour is underpinned by a fruity tone, which then yields to a warm peppercorn-like finish. The heat is very manageable and yet the warmth is definitely there and lasts a while.
This is a great everyday table sauce and an ideal family condiment. However, it’ll also work really well for making zesty salad dressings, spicy mayonnaise or to give depth to homemade salsas and dips.
